Raspberry Pork Chops

As a kid I hated pork chops. And I'm still not really a fan of pork. But my boyfriend made a delicious spicy raspberry glaze for a cut that he BBQ'd. I just used the leftovers for this. You could probably use just about any fruit glaze. The one my boyfriend made used raspberry jelly, fresh raspberries and red pepper flakes.

My "Mexican Salad"

Typically I avoid anything that involves Mexican food staples tossed in a heap or layered and then "Mexican" added to the beginning of the name.  Things like "mexican salad" or "mexican pizza." But I was pretty impressed with myself with this one.


Fresh Guacamole!

As a kid is "hated!" avocados and guacamole. It wasn't until I was in college that I dared to try it. Now I know why my mom always said I was crazy...

Meatless Pizza

I'm not usually a fan of veggie pizza. But when you're selective about about your veggies, it can actually be quite delicious. Using zucchini, other summer squash, and sweet basil (all from my garden), plus Monterey Jack cheese, I made a delicious pizza. Add some fresh or sun dried tomatoes, olives and artichoke hearts and it's simply heaven!

Mac and cheese... For adults

Growing up, mac & cheese is what my younger sister loved, and I was the only one who could make it the way she liked. The trick is more butter, less milk. Now, my boyfriend makes fun of me when I stock up when they're on sale for under $1. Until now. I found an amazing recipe that is super cheeses AND has something you'd never guess: leeks.
