Mac and cheese... For adults

Growing up, mac & cheese is what my younger sister loved, and I was the only one who could make it the way she liked. The trick is more butter, less milk. Now, my boyfriend makes fun of me when I stock up when they're on sale for under $1. Until now. I found an amazing recipe that is super cheeses AND has something you'd never guess: leeks.

1. Boil 5 cups (exactly) of water.  While you wait, grate some cheese.  4oz of white cheddar cheese and 1oz  of fresh dry parmesean. To prep the leeks, cut them in half lengthwise. And then cut them into slices.  Use a strainer to wash the slices.  Leeks like to accumulate dirt inside the leaves so it's pointless to wash them before cutting them.

2. Once the water is boiling, add 1 package of pasta, the grated cheese, and cream cheese.  Don't drain the water!  Add about a teaspoon of salt and 1/2 teaspoon of black pepper.  Mix, cover and let simmer for 5 minutes.  Stir a few times.  Then stir in the leeks.  Continue cooking another 5 minutes or so until the sauce has thickened.  Stir occasionally.

To make it a little fancy, stir in fresh bacon bits before serving.  Enjoy!
