Spicy Tuna Pasta

A variation on the pasta con olio e aglio, this recipe makes sure you get your Omega-3's too!

Ingredients
1 package uncooked pasta
1/4 cup parmesan cheese, grated (asiago or other similar dry cheese is fine)
1 small jar of sun dried tomatoes packed in oil, drained
a handful of cilantro leaves
3 TBL olive oil
2 garlic cloves
1/2 tsp crushed red pepper flakes (or one diced small red pepper)
1 can chunk tuna, drained

1. Cook pasta as directed, until al dente.  Drain.

2. Grate cheese, slice tomatoes, dice garlic, dice chile pepper, and chop cilantro.  

note: if you keep the sun dried tomatoes in the fridge, the oil will solidify.  This will make cleaning them more difficult.  If possible, take them out a few hours before you start, and use a bowl with paper towel to drain them.  The use extra paper towels to dab them off.  Some oil is okay; it'll help them cook.

3. Heat oil in a deep pan (skillet) over medium heat.  Sautee garlic and chile pepper until garlic is golden brown.  Add tomatoes and tuna.  Cook until tuna has browned slightly, stirring constantly so nothing burns.  Add pasta, cheese and cilantro.  Stir until everything is well coated and evenly distributed.

note: 1/2 tsp of pepper flakes will give it a nice bite.  If you don't like too much spice, use 1/4 tsp, and add more as garnish if desired.
