A few things to know as you work your way around the kitchen...


EVOO - extra virgin olive oil


tsp - teaspoon


TBL - tablespoon

Caveat on the way I cook: 
I learned to cook with non-precise measurements. So I use measurements like "some," "a handful," and "1-2 teaspoons."  I try to be as precise as possible, but sometimes it's hard.  But the great thing about cooking that way, it forces you to understand what you're doing.  And gives you the flexibility to get exactly the flavor you want.
