TJ Style Hot Dogs

I love being Mexican. And I love Mexican street food. Pretty much anything made on a cart outside a soccer stadium or on a street corner is delicious. And probably pretty cheap. But my boyfriend, being a San Diego native, is far more familiar with Tijuana street foods and made these delicious hot dogs after a morning of tough yardwork.


Ingredients:

- Hot dogs
- Hot dog buns
- Bacon
- Ketchup
- Mayonnaise
- Salsa

1. Wrap hot dogs with bacon.  You can use a toothpick to hold them in place, but not necessary.

2. Heat a pan over medium-high heat.  Place bacon wrapped hot dogs in pan, on the side where the bacon ends.  This will cook the bacon in place so it doesn't unravel. Once each side is cooked, turn so that the other end of the bacon gets cooked in place.  Then turn to each of the next "sides."  Make sure bacon gets cooked all the way through!

3.  Toast bun.  Spread mayo on one side of the bun.  Place the hot dog in the bun.  Squeeze some ketchup between the mayo side of the bun and the hot dog.  Top with pico de gallo salsa.  

4. Enjoy!

We used chicken hot dogs and pre-cooked turkey bacon.  Made things a little easier.  The way these are actually made is on a grill.  Raw bacon cooks a lot easier that way, and more evenly.  Mustard can be added if desired, but I don't like mustard.  And I have seen globs of mayo used instead of a light spread.  Just depends on your tastes.
