Bacon, egg and Gouda breakfast

This one was inspired by a coffee shop favorite. Quite possibly the fanciest breakfast sandwich ever.



For each sandwich you'll need:
- 1 slice of bacon
- 1 egg
- 2 thinly cut slices of Gouda cheese
- 1 English muffin or focaccia roll

1. Make your egg. However you want. The "original" way is scrambled, but unless you have one of those egg shapers, it can be a little messy when eating. Anything with a watery yolk might be a but messy. But I imagine a poached egg would be delicious with this.

2. Make the bacon. Once crispy, cut into 1-2" long pieces (depending on the size on your bread).

3. Toast your bread. If you want slightly melted cheese, layer your sandwich so the cheese is touching the most consistently hot thing (probably egg). Or put it on the bread while its toasting. But make sure to watch it. If it gets past melting, it'll start to bubble and lose some of its flavor.

4. Assemble your sandwich and enjoy!
